Ingredients

  • 4 large eggs
  • ½ cup granulated sugar

  • 2½ cups whole milk

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Place six 6-ounce ramekins or a 1½-quart baking dish inside a large roasting pan.
  3. In a large bowl, whisk together the eggs, sugar, and salt until smooth.
  4. Warm the milk in a saucepan over medium heat until hot but not boiling.
  5. Slowly whisk the warm milk into the egg mixture a little at a time to prevent the eggs from scrambling.
  6. Stir in the vanilla extract.
  7. Pour the custard mixture evenly into the ramekins or baking dish.
  8. Sprinkle the tops lightly with ground nutmeg.
  9. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the ramekins.
  10. Bake for 40–45 minutes, or until the custard is set but still slightly jiggles in the center.
  11. Remove the ramekins from the water bath and let cool for 15 minutes.
  12. Serve warm or refrigerate for at least 2 hours before serving chilled.
