Ingredients:
- 1 lb Italian sausage, mild or hot
- 1 small head green cabbage, chopped
- 1 medium onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups chicken broth
- 2 medium potatoes, peeled and diced
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp black pepper
- Salt, to taste
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- ½ cup grated Parmesan cheese, for serving
Method:
- Heat the olive oil in a large pot over medium-high heat. Add the Italian sausage and cook for 5–7 minutes, breaking it apart with a spoon, until browned.
- Add the onion, carrots, and celery. Cook for 5–6 minutes until the vegetables begin to soften. Stir in the garlic and cook for another minute.
- Add the diced tomatoes, chicken broth, potatoes, Italian seasoning, paprika, black pepper, and salt. Bring to a boil.
- Add the chopped cabbage and stir well. Reduce the heat, cover, and simmer for 25–30 minutes, or until the potatoes and cabbage are tender.
- Taste and adjust the seasoning. Simmer uncovered for a few more minutes if you prefer a thicker soup.
- Ladle into bowls and garnish with fresh parsley and grated Parmesan. Serve hot with crusty bread.
