Ingredients:
- 1 lb Italian sausage, casings removed
- ½ head green cabbage, chopped
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- ½ cup grated Parmesan cheese, for serving
Method:
- Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces.
- Add the onion, carrots, celery, and garlic. Cook for 5–6 minutes, until the vegetables begin to soften.
- Add the potatoes, cabbage, and diced tomatoes.
- Pour in the chicken broth and add the Italian seasoning, paprika, salt, and black pepper.
- Bring to a boil, then reduce the heat, cover, and simmer for 25–30 minutes, until the potatoes and cabbage are tender.
- Taste and adjust the seasoning as needed.
- Stir in the fresh parsley.
- Ladle into bowls and top with grated Parmesan. Serve hot with crusty bread. 🥣🥬🧀
