Ingredients:
For the Cake:
- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1½ tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1½ cups granulated sugar
- ½ cup brown sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- 2 tsp vanilla extract
- 1 cup buttermilk
- 1 cup hot water
For the Coconut-Pecan Frosting:
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- ½ cup unsalted butter
- 1 tsp vanilla extract
- 1½ cups sweetened shredded coconut
- 1 cup chopped pecans
Method:
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla.
- Gradually add the dry ingredients, alternating with the buttermilk. Slowly mix in the hot water until the batter is smooth and fairly thin.
- Divide the batter between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
- For the frosting, combine the evaporated milk, sugar, egg yolks, and butter in a saucepan over medium heat. Cook for 10–12 minutes, stirring constantly, until thickened. Remove from heat and stir in the vanilla, coconut, and pecans.
- Place one cake layer on a serving plate and spread with frosting. Add the second layer and cover the top generously with the remaining coconut-pecan frosting.
- Let the cake cool completely before slicing and serving.
