🍅 Old-Fashioned Stuffed Tomatoes 😍
Ingredients:
* 6 large ripe tomatoes
* 1½ cups cooked white rice
* ½ lb ground beef
* 1 small onion, finely diced
* 2 cloves garlic, minced
* ½ cup breadcrumbs
* ½ cup shredded cheddar cheese
* 2 tbsp fresh parsley, chopped
* 1 tsp Italian seasoning
* ½ tsp salt*
½ tsp black pepper* 2 tbsp olive oil*
¼ cup grated Parmesan cheese
Method:
1. Preheat oven to 375°F (190°C).
Lightly grease a baking dish.
2. Slice the tops off the tomatoes and
carefully scoop out the pulp and
seeds, leaving the shells intact. Save
about ½ cup of the tomato pulp.
3. Heat olive oil in a skillet over
medium heat. Add the onion and cook
for 3–4 minutes.
4. Add the ground beef and garlic.
Cook until the beef is browned and
fully cooked. Drain any excess
grease.
5. Stir in the cooked rice,
tomato pulp, breadcrumbs, parsley,
Italian seasoning, salt, and black
pepper.
6. Remove from heat and stir
in the shredded cheddar cheese.
7. Spoon the filling generously into
each tomato.
8. Place the stuffed tomatoes in the
prepared baking dish and sprinkle
Parmesan cheese over the tops.
9. Bake uncovered for 30–35 minutes,
until the tomatoes are tender and the
tops are golden brown.
10. Let them rest for 5 minutes before
serving.🍽️ Serve warm with a fresh
green salad, crusty bread, or roasted
potatoes!
