Ingredients:
- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1Β½ cups small pasta, such as ditalini
- 1 tsp Italian seasoning
- Β½ tsp dried oregano
- Β½ tsp black pepper
- Β½ tsp salt, or to taste
- 1 bay leaf
- Β½ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped, optional
- Red pepper flakes, optional
Method:

- Stir in the crushed tomatoes, broth, Italian seasoning, oregano, salt, pepper, and bay leaf.
- Bring to a gentle boil, then reduce the heat and simmer for 15 minutes.
- Add the cannellini beans. For a thicker, creamier soup, mash about Β½ cup of the beans before adding them.
- Stir in the pasta and simmer for 8β10 minutes, or until the pasta is tender. Stir occasionally so it doesnβt stick.
- Remove the bay leaf and stir in the Parmesan cheese.

- Ladle into bowls and garnish with fresh parsley, basil, and extra Parmesan.
