🌠Italian Sausage with Peppers & Onions
Servings: 4–6
Ingredients
- 1½ lbs Italian sausage links, mild or hot
- 2 tbsp olive oil
- 1 large yellow onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- ½ cup chicken broth
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes, optional
- 2 tbsp fresh parsley, chopped
Method
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the Italian sausages and brown for 3–4 minutes per side.
- Remove the sausages and set aside. They don’t need to be fully cooked yet.
- Add the remaining olive oil to the skillet. Add the sliced onion and bell peppers. Cook for 7–10 minutes, stirring occasionally, until softened and lightly caramelized.
- Add the minced garlic and cook for 30 seconds.
- Stir in the diced tomatoes, chicken broth, Italian seasoning, paprika, salt, black pepper, and red pepper flakes.
- Return the sausages to the skillet and nestle them into the peppers and onions.
- Cover and simmer over medium-low heat for 12–15 minutes, turning the sausages once, until they are cooked through and reach 160°F (71°C) internally.
- Remove the lid and simmer for another 2–3 minutes to thicken the sauce slightly.
- Sprinkle with fresh parsley and serve hot on toasted hoagie rolls, over pasta, or with crusty bread. ðŸŒðŸ«‘🧅
