Ingredients:
- 1½ lbs Italian sausage, mild or hot
- 2 large bell peppers, sliced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- ½ cup chicken broth
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp black pepper
- Salt, to taste
- 6 hoagie rolls
- ½ cup shredded mozzarella or provolone cheese (optional)
- 2 tbsp fresh parsley, chopped
Method:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the sausages and cook for 8–10 minutes, turning occasionally, until browned and cooked through. Remove and slice into pieces.
- Add the remaining olive oil to the skillet. Add the sliced peppers and onions and cook for 7–10 minutes, stirring occasionally, until softened and lightly caramelized.
- Add the garlic and cook for 30 seconds. Season with Italian seasoning, paprika, black pepper, and salt.
- Return the sliced sausage to the skillet and pour in the chicken broth. Stir everything together and simmer for 5–7 minutes, until the liquid reduces and the flavors come together.
- Toast the hoagie rolls lightly. Fill each roll with the sausage, peppers, and onions.
- Top with mozzarella or provolone if desired, then garnish with fresh parsley. Serve hot with fries, chips, or a simple salad. 🌭🫑🧅🧀✨
