Ingredients
- 1Β½ lbs fresh okra, sliced into Β½-inch rounds
- 4 large ripe tomatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 tbsp butter
- 1 tbsp olive oil
- Β½ cup chicken broth
- 1 tsp salt
- Β½ tsp black pepper
- Β½ tsp paprika
- Β½ tsp garlic powder
- ΒΌ tsp onion powder
- ΒΌ tsp red pepper flakes, optional
- 1 tsp sugar, optional
- 2 tbsp fresh parsley, chopped
Method
- Heat the butter and olive oil in a large skillet over medium heat.
- Add the onion and cook for 3β4 minutes until softened.
- Add the garlic and cook for another 30 seconds.
- Stir in the sliced okra and cook for 5β7 minutes, stirring occasionally.
- Add the diced tomatoes, chicken broth, salt, pepper, paprika, garlic powder, onion powder, and red pepper flakes.
- Reduce the heat to low, cover, and simmer for 15β20 minutes, stirring occasionally, until the okra is tender and the tomatoes have broken down into a rich sauce.
- Stir in the sugar if the tomatoes are particularly acidic.
- Taste and adjust the seasoning.
- Sprinkle with fresh parsley and serve hot as a side dish with cornbread, rice, or fried chicken. π π«
