Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 1½ cups fresh peaches, peeled and diced
- ½ cup chopped pecans (optional)
Method:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla.
- Stir in the sour cream. Gradually add the dry ingredients and mix just until combined.
- Gently fold in the diced peaches and chopped pecans if using. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely. Slice and serve with butter or enjoy it warm with a cup of coffee. 🍑🍞
