  1. Drain and rinse the soaked white beans.
  2. Place the beef, beans, onion, carrots, celery, garlic, beef broth, smoked paprika, black pepper, thyme, and bay leaves in a large heavy pot.
  3. Bring to a boil, then reduce the heat to low. Cover and simmer for 1½–2Β½ hours, or until the beans are tender and the beef is very tender.
  4. Remove the beef from the pot. Shred or cut the meat into bite-sized pieces, removing any bones and excess fat.
  5. Return the beef to the soup and simmer for another 10–15 minutes.
  6. Remove the bay leaves. Taste and season with salt as needed.
  7. Stir in the fresh parsley just before serving.
