Ingredients:
- 1Β½ lbs ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and cut into chunks
- 3 carrots, sliced
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp paprika
- Β½ tsp black pepper
- Salt, to taste
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped (optional)
Method:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and onion and cook for 6β8 minutes, breaking up the beef, until browned. Drain excess grease if needed.
- Add the garlic and cook for another minute. Stir in the tomato paste, paprika, thyme, and black pepper.
- Add the diced tomatoes, beef broth, and Worcestershire sauce. Stir well and bring to a gentle boil.
- Add the potatoes and carrots. Reduce the heat, cover, and simmer for 30β40 minutes, stirring occasionally, until the vegetables are tender and the stew has thickened.
- Taste and adjust the salt and seasoning. Simmer uncovered for a few more minutes if you prefer a thicker stew.
- Garnish with fresh parsley and serve hot with crusty bread or homemade biscuits. π₯π₯π₯©β¨
