For the Cake:

  • 2½ cups all-purpose flour
  • 1½ cups granulated sugar
  • 2½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¼ cup vegetable oil
  • 4 large egg whites, room temperature
  • 1 cup coconut milk
  • ½ cup whole milk
  • 2 tsp vanilla extract
  • 1 tsp coconut extract

For the Fluffy Coconut Frosting:

  • 1½ cups heavy whipping cream, cold
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 2 cups sweetened shredded coconut

For Garnish:

  • Extra shredded coconut
  • White chocolate curls, optional

Method

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter, oil, and sugar until light and fluffy, about 3 minutes.
  4. Add the egg whites gradually, beating well after each addition.
  5. Mix in the vanilla extract and coconut extract.
  6. Add the dry ingredients in three additions, alternating with the coconut milk and whole milk. Mix just until combined.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the cakes in their pans for 10 minutes, then transfer to wire racks to cool completely.

Make the Coconut Frosting

  1. Beat the softened cream cheese with the powdered sugar until smooth and creamy.
  2. Add the vanilla and coconut extracts.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture, then fold in 2 cups of shredded coconut.
  5. Place one cake layer on a serving plate and spread a generous layer of frosting over it.
  6. Add the second cake layer and cover the top and sides with the remaining frosting.
  7. Sprinkle generously with shredded coconut and white chocolate curls, if desired.
  8. Refrigerate for at least 1 hour before slicing so the frosting sets.
