🛒 Ingredients
For the Meatloaf:
- 2 lbs ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 large eggs
- ½ cup milk
- ¼ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
For the Glaze:
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
For the Mashed Potatoes:
- 2½ lbs potatoes, peeled and cubed
- 4 tbsp butter
- ½–¾ cup warm milk
- ½ tsp salt
- ¼ tsp black pepper
For the Gravy:
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups beef broth
- 1 tsp Worcestershire sauce
- ½ tsp onion powder
- ¼ tsp black pepper
- Salt, to taste
👩🍳 Instructions
- Prepare the meatloaf: Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, and seasonings. Mix gently until just combined.
- Shape: Form the mixture into a loaf and place it in a lightly greased loaf pan or on a lined baking sheet.
- Make the glaze: Mix ketchup, brown sugar, mustard, and Worcestershire sauce. Spread half over the meatloaf.
- Bake: Bake for 45 minutes. Brush with the remaining glaze and continue baking for 15–25 minutes, until the center reaches 160°F (71°C).
- Make the potatoes: While the meatloaf cooks, boil the potatoes in salted water for 15–20 minutes, until fork-tender. Drain well.
- Mash: Add butter, warm milk, salt, and pepper. Mash until creamy and smooth.
- Make the gravy: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes. Slowly whisk in beef broth. Add Worcestershire sauce, onion powder, and pepper. Simmer for 5–7 minutes, stirring, until thickened.
- Rest & serve: Let the meatloaf rest for 10 minutes, then slice and serve with a generous scoop of mashed potatoes and plenty of warm gravy. 🥩🥔🤎
