Ingredients:
- 4 catfish fillets
- 1 cup buttermilk
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- Vegetable oil, for frying
- Lemon wedges, for serving
Method:
- Place the catfish fillets in a bowl and pour the buttermilk over them. Let them marinate for 20–30 minutes.
- In a shallow bowl, combine the cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper.
- Remove the catfish from the buttermilk and coat each fillet thoroughly in the seasoned cornmeal mixture.
- Heat about ½ inch of oil in a large skillet over medium-high heat. Fry the fillets for 3–5 minutes per side, until golden and cooked through. Drain on paper towels and serve hot with lemon wedges, coleslaw, or fries.
