Ingredients:
- 1 lb fresh okra, sliced
- 2 cups diced tomatoes
- 1 small onion, chopped
- 3 slices bacon, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp butter
- Β½ tsp smoked paprika
- Β½ tsp black pepper
- ΒΌ tsp red pepper flakes (optional)
- Salt, to taste
- 1 tsp sugar (optional)
- 1 tbsp fresh parsley, chopped
Method:
- Cook the chopped bacon in a large skillet over medium heat until crisp. Remove the bacon and leave about 2 tbsp of the bacon drippings in the skillet.
- Add the onion and cook for 4β5 minutes until softened. Add the garlic and butter and cook for another minute.
- Add the sliced okra and cook for 5β7 minutes, stirring occasionally, until it begins to soften.
- Stir in the diced tomatoes, chicken broth, smoked paprika, black pepper, red pepper flakes, salt, and sugar if using.
- Bring to a gentle simmer, reduce the heat, and cook uncovered for 15β20 minutes, stirring occasionally, until the okra is tender and the tomatoes have formed a flavorful sauce.
- Stir the crispy bacon back into the skillet. Taste and adjust the seasoning.
- Garnish with fresh parsley and serve hot as a classic Southern side dish with cornbread or rice. π π₯πΏβ¨
