Amish Pot Pie

Ingredients

  • 2 lbs boneless chicken thighs or breasts
  • 6 cups chicken broth
  • 3 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold butter
  • ½ cup cold water
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 cup sliced carrots (optional)

Method

  1. Place the chicken and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer until the chicken is cooked through.
  2. Remove the chicken, shred it, and set aside. Keep the broth in the pot.
  3. Add the potatoes, onion, carrots, pepper, and thyme to the broth. Simmer until the vegetables are tender.
  4. For the pot pie noodles, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add water and mix until a dough forms.
  5. Roll the dough out on a floured surface and cut into small squares.
  6. Bring the broth back to a gentle boil. Drop the dough squares into the broth one at a time, stirring gently.
  7. Cook for 10–15 minutes, until the noodles are tender and the broth has thickened slightly.
  8. Return the shredded chicken to the pot and simmer for another 3–5 minutes.
  9. Serve hot and enjoy!
