Ingredients
- 2 lbs boneless chicken thighs or breasts
- 6 cups chicken broth
- 3 medium potatoes, peeled and diced
- 1 small onion, diced
- 2 cups all-purpose flour
- ½ teaspoon salt
- ½ cup cold butter
- ½ cup cold water
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 1 cup sliced carrots (optional)
Method
- Place the chicken and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer until the chicken is cooked through.
- Remove the chicken, shred it, and set aside. Keep the broth in the pot.
- Add the potatoes, onion, carrots, pepper, and thyme to the broth. Simmer until the vegetables are tender.
- For the pot pie noodles, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add water and mix until a dough forms.
- Roll the dough out on a floured surface and cut into small squares.
- Bring the broth back to a gentle boil. Drop the dough squares into the broth one at a time, stirring gently.
- Cook for 10–15 minutes, until the noodles are tender and the broth has thickened slightly.
- Return the shredded chicken to the pot and simmer for another 3–5 minutes.
- Serve hot and enjoy!
