Hamburger Vegetable Soup

🛒 Ingredients

  • 1½ lbs ground beef
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 3 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 cup green beans
  • 1 cup corn
  • 1 cup green peas
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp Worcestershire sauce
  • 1 bay leaf
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped

👩‍🍳 Instructions

  1. Brown the beef: In a large soup pot, cook the ground beef and onion over medium-high heat for 6–8 minutes, breaking up the beef as it cooks. Drain excess grease.
  2. Add garlic: Stir in the minced garlic and cook for about 30 seconds.
  3. Build the soup: Add beef broth, diced tomatoes, tomato sauce, potatoes, carrots, green beans, corn, and peas.
  4. Season: Stir in Italian seasoning, paprika, Worcestershire sauce, bay leaf, salt, and black pepper.
  5. Simmer: Bring to a boil, then reduce heat and cover. Simmer for 25–30 minutes, or until the potatoes and carrots are tender.
  6. Finish: Remove the bay leaf and stir in fresh parsley. Taste and adjust seasoning if needed.
  7. Serve: Ladle into bowls and serve hot with crusty bread or cornbread. 🥣❤️

Tip: For a thicker, richer soup, simmer uncovered for the last 10 minutes.
