🛒 Ingredients
- 1½ lbs ground beef
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 3 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 cup green beans
- 1 cup corn
- 1 cup green peas
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp Worcestershire sauce
- 1 bay leaf
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
👩🍳 Instructions
- Brown the beef: In a large soup pot, cook the ground beef and onion over medium-high heat for 6–8 minutes, breaking up the beef as it cooks. Drain excess grease.
- Add garlic: Stir in the minced garlic and cook for about 30 seconds.
- Build the soup: Add beef broth, diced tomatoes, tomato sauce, potatoes, carrots, green beans, corn, and peas.
- Season: Stir in Italian seasoning, paprika, Worcestershire sauce, bay leaf, salt, and black pepper.
- Simmer: Bring to a boil, then reduce heat and cover. Simmer for 25–30 minutes, or until the potatoes and carrots are tender.
- Finish: Remove the bay leaf and stir in fresh parsley. Taste and adjust seasoning if needed.
- Serve: Ladle into bowls and serve hot with crusty bread or cornbread. 🥣❤️
