- π« 1Β½ cups dried white beans, soaked overnight
- π§ 1 medium onion, diced
- π₯ 2 carrots, diced
- πΏ 2 celery stalks, diced
- π§ 3 cloves garlic, minced
- π² 8 cups beef broth
- πΆοΈ 1 teaspoon smoked paprika
- π§ Β½ teaspoon black pepper
- πΏ Β½ teaspoon dried thyme
- π 2 bay leaves
- π§ Salt, to taste
- πΏ 2 tablespoons fresh parsley, chopped

- Drain and rinse the soaked white beans.
- Place the beef, beans, onion, carrots, celery, garlic, beef broth, smoked paprika, black pepper, thyme, and bay leaves in a large heavy pot.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 1Β½β2Β½ hours, or until the beans are tender and the beef is very tender.
- Remove the beef from the pot. Shred or cut the meat into bite-sized pieces, removing any bones and excess fat.
- Return the beef to the soup and simmer for another 10β15 minutes.
- Remove the bay leaves. Taste and season with salt as needed.
- Stir in the fresh parsley just before serving.
