Ingredients
- 2 cups granulated sugar
- 1 cup light corn syrup
- ½ cup water
- 2 cups roasted, salted peanuts
- 3 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 tsp baking soda
- ¼ tsp salt
Instructions
- Line a large baking sheet with parchment paper and lightly grease it.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves.
- Bring to a boil and cook without stirring until the mixture reaches 250°F (120°C).
- Stir in the peanuts and continue cooking until the mixture reaches 300°F (149°C) and turns a deep golden color.
- Remove from heat immediately. Quickly stir in the butter, vanilla, salt, and baking soda. Be careful—the mixture will foam up.
- Immediately pour onto the prepared baking sheet and spread into a thin, even layer.
- Let cool completely for 30–60 minutes, until hard.

Tip: A candy thermometer makes it much easier to get the perfect crunchy texture.
