Ingredients:
- 6 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups milk
- 1 cup heavy cream
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- ½ cup shredded cheddar cheese (optional)
- 2 tablespoons fresh parsley, chopped
Method:
- Melt the butter in a large pot over medium heat. Add the onion, carrots, celery, and garlic. Cook for 5–6 minutes, until softened.
- Sprinkle in the flour and stir for 1 minute.
- Gradually pour in the chicken broth, stirring until smooth.
- Add the potatoes, salt, pepper, thyme, and paprika. Bring to a boil.
- Reduce the heat, cover, and simmer for 20–25 minutes, until the potatoes are tender.
- Stir in the milk and heavy cream. Simmer gently for 5 minutes.
- For a thicker soup, mash some of the potatoes with a spoon or potato masher.
- Stir in the cheddar cheese, if using, until melted.
- Taste and adjust the seasoning. Garnish with fresh parsley and serve hot with crusty bread. 🥔🥣
