Ingredients:
- 2¾ cups all-purpose flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground cloves
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- ⅓ cup molasses
- ½ cup granulated sugar, for rolling
Method:
- Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- In a large bowl, beat the softened butter and brown sugar until light and creamy. Add the egg and molasses, then mix until well combined.
- Gradually add the dry ingredients and mix until a soft dough forms. Roll the dough into large balls, about 2–3 tablespoons each, then coat generously in granulated sugar.
- Place the dough balls several inches apart on the prepared baking sheet. Bake for 11–13 minutes, until the cookies are puffed and crackled around the edges.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy warm or store in an airtight container.
