Ingredients:
- 1 lb elbow macaroni
- 1 cup mayonnaise
- ¼ cup yellow mustard
- 2 tbsp apple cider vinegar
- 2 tbsp sugar
- ½ cup celery, finely chopped
- ½ cup red onion, finely chopped
- ½ cup red bell pepper, finely chopped
- ¼ cup sweet pickle relish
- 2 hard-boiled eggs, chopped
- ½ tsp garlic powder
- ½ tsp black pepper
- Salt, to taste
Method:
- Cook the macaroni according to the package directions until tender. Drain and rinse under cold water, then let it cool completely.
- In a large bowl, whisk together the mayonnaise, mustard, apple cider vinegar, sugar, garlic powder, black pepper, and a pinch of salt until smooth.
- Add the cooled macaroni, celery, red onion, bell pepper, pickle relish, and chopped eggs. Gently toss until everything is evenly coated.
- Cover and refrigerate for at least 2 hours to allow the flavors to blend.
- Before serving, stir well and add a little more mayonnaise if needed. Serve chilled as a creamy, classic side dish.
