Old-Fashioned Chicken & Dumplings

Ingredients:

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 6 cups chicken broth
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon poultry seasoning
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 3 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped

Method:

  1. Melt 2 tablespoons of butter in a large pot. Add the onion, carrots, celery, and garlic. Cook for 4–5 minutes until softened.
  2. Add the chicken, chicken broth, salt, pepper, thyme, and poultry seasoning. Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes, until the chicken is tender.
  3. Remove the chicken, shred it with two forks, and return it to the pot.
  4. For the dumplings, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter until a soft dough forms.
  5. Drop spoonfuls of dough over the simmering chicken and broth.
  6. Cover the pot and simmer gently for 15 minutes. Do not lift the lid while the dumplings cook.
  7. Remove the lid and check that the dumplings are fluffy and cooked through.
  8. Garnish with fresh parsley and serve hot. 🥣🍗
