Stuffed Pepper Soup

Ingredients:

  • 1½ lbs ground beef
  • 1 large onion, chopped
  • 3 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup cooked white rice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • 2 tablespoons fresh parsley, chopped
  • Shredded cheddar cheese, for serving (optional)

Method:

  1. Brown the ground beef in a large pot over medium heat. Drain any excess grease.
  2. Add the chopped onion and diced bell peppers. Cook for 5–6 minutes, until softened.
  3. Add the garlic and cook for another 30 seconds.
  4. Stir in the crushed tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, pepper, and sugar if using.
  5. Bring the soup to a boil, then reduce the heat and simmer uncovered for 20–25 minutes.
  6. Stir in the cooked rice and simmer for another 5 minutes.
  7. Taste and adjust the seasoning.
  8. Garnish with fresh parsley and shredded cheddar cheese, if desired.
  9. Serve hot with crusty bread or cornbread. 🌶️🥣
