Ingredients:
- 1½ lbs ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 3 cups beef broth
- 1 packet taco seasoning
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
For Serving:
- Shredded cheddar cheese
- Sour cream
- Diced avocado
- Chopped green onions
- Fresh cilantro
- Tortilla chips
Method:
- Brown the ground beef in a large pot over medium heat. Drain any excess grease.
- Add the chopped onion and cook for 4–5 minutes, until softened. Add the garlic and cook for 30 seconds.
- Stir in the kidney beans, black beans, corn, diced tomatoes, tomatoes with green chilies, tomato sauce, and beef broth.
- Add the taco seasoning, chili powder, cumin, salt, and pepper. Stir well.
- Bring the soup to a boil, then reduce the heat and simmer uncovered for 25–30 minutes, stirring occasionally.
- Taste and adjust the seasoning as needed.
- Ladle into bowls and top with shredded cheese, sour cream, avocado, green onions, cilantro, and tortilla chips.
- Serve hot and enjoy! 🌮🥣
