Ingredients:
- 1½ lbs ground beef
- 1 large onion, chopped
- 3 bell peppers, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 cup cooked white rice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon sugar (optional)
- 2 tablespoons fresh parsley, chopped
- Shredded cheddar cheese, for serving (optional)
Method:
- Brown the ground beef in a large pot over medium heat. Drain any excess grease.
- Add the chopped onion and diced bell peppers. Cook for 5–6 minutes, until softened.
- Add the garlic and cook for another 30 seconds.
- Stir in the crushed tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, pepper, and sugar if using.
- Bring the soup to a boil, then reduce the heat and simmer uncovered for 20–25 minutes.
- Stir in the cooked rice and simmer for another 5 minutes.
- Taste and adjust the seasoning.
- Garnish with fresh parsley and shredded cheddar cheese, if desired.
- Serve hot with crusty bread or cornbread. 🌶️🥣
