Southern Fried Chicken Gizzards 🍗

Ingredients:

• 1½ lbs chicken gizzards, cleaned and trimmed• 1 cup buttermilk• 1 large egg• 1½ cups all-purpose flour• ½ cup cornmeal• 1 tsp paprika• 1 tsp garlic powder• 1 tsp onion powder• ½ tsp black pepper• ½ tsp salt• ¼ tsp cayenne pepper• Vegetable oil, for frying

Method:

1. Place the cleaned chicken gizzards in a pot and cover with water. Bring to a boil, reduce the heat, cover, and simmer for 45–60 minutes, until tender. Drain and let them cool slightly.

2. In a bowl, whisk together the buttermilk and egg. In another bowl, combine the flour, cornmeal, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.

3. Dip each gizzard into the buttermilk mixture, then coat generously with the seasoned flour mixture.

4. Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C). Carefully add the coated gizzards in batches and fry for 3–5 minutes, until golden brown and crispy.
