Ingredients
- 4 medium yellow squash, sliced into ¼-inch rounds
- 1 cup all-purpose flour
- ½ cup cornmeal
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 2 large eggs
- ½ cup milk
- Vegetable oil, for frying
Method
- Slice the squash into thin, even rounds.
- In a bowl, whisk together the eggs and milk.
- In another bowl, combine flour, cornmeal, salt, black pepper, and garlic powder.
- Dip each squash slice into the egg mixture, then coat well with the flour mixture.
- Heat about ½ inch of oil in a large skillet over medium-high heat.
- Fry the squash in batches for 2–3 minutes per side, until golden and crispy.
- Transfer to a paper towel-lined plate to drain.
- Serve hot with your favorite dipping sauce or alongside a Southern-style meal.
