Ingredients:
- 2 lbs ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) pinto beans, drained
- 1½ cups beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp oregano
- ¼ tsp cayenne pepper, optional
- 1 tbsp brown sugar, optional
Method:
- Heat a large pot over medium-high heat. Brown the ground beef until fully cooked, then drain excess grease.
- Add the diced onion and cook for 4–5 minutes until softened. Stir in the garlic and cook for another 30 seconds.
- Add the diced tomatoes, tomato sauce, beef broth, kidney beans, and pinto beans.
- Stir in the chili powder, cumin, smoked paprika, salt, pepper, oregano, and cayenne pepper.
- Bring the chili to a gentle boil, then reduce the heat to low.
- Cover and simmer for 30–45 minutes, stirring occasionally, until thick and flavorful.
- Taste and adjust the seasoning. Serve hot with shredded cheese, sour cream, green onions, or cornbread.
